Ingredients

  • 225g plain flour
  • 150g butter, softened
  • 100g caster sugar
  • 150g golden syrup
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1/4 tsp salt
  • 1 egg, beaten

  • 225g plain flour
  • 150g butter, softened
  • 100g caster sugar
  • 150g golden syrup
  • 2 tsp baking powder
  • 2 tsp ground ginger
  • 1/4 tsp salt
  • 1 egg, beaten

Preheat your oven to 180°C/350°F/gas 4 and line a baking tray with parchment paper.

In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the golden syrup, ginger, and salt to the mixture and beat well. Sift in the flour and baking powder, and mix until a dough forms.

Roll out the dough on a floured surface to about 1/2cm (1/4 in) thickness. Use a round cookie cutter or a glass to cut out the biscuits. You should get about 12-15 biscuits.

Place the biscuits on the prepared baking tray, leaving about 1 inch of space between each one.

Brush the tops of the biscuits with the beaten egg.

Bake for 15-20 minutes, or until the biscuits are golden brown around the edges.

Remove the biscuits from the oven and allow them to cool on the tray for 5 minutes before transferring them to a wire rack to cool completely.

If desired, decorate the cooled biscuits with sprinkles or crystallized ginger.
