Greek Salad

Ingredients

  • 1 large cucumber, skinned and deseeded
  • 200g cherry tomatoes, halved 
  • 1/2 red onion, sliced finely into half-moons
  • 1 large handful of kalamata olives
  • 1 tsp dried oregano 
  • 2 tbsp olive oil
  • 200g feta
  • salt and pepper for seasoning 

  • 1 large cucumber, skinned and deseeded
  • 200g cherry tomatoes, halved
  • 1/2 red onion, sliced finely into half-moons
  • 1 large handful of kalamata olives
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 200g feta
  • salt and pepper for seasoning

Chuck your prepped tomatoes, cucumber and onion into a colander and season generously with salt. Ideally, allow sitting for an hour so the excess moisture drains off.

Pop into a bowl and add the olives, oregano, olive oil and some cracked black pepper. Check your seasoning and when you’re happy pop serve with the feta sat on top!
