Blistered Tomato Bruschetta

Ingredients

  • 200g cherry vine tomatoes
  • 2 Waitrose Summer parmesan ciabatta rolls
  • 1 garlic clove
  • 1 courgette
  • 1 lemon
  • Waitrose Summer whipped feta dip
  • Olive oil for dressing
  • Salt for seasoning

Keep your tomatoes on the vine, drizzle with oil and sprinkle with salt. Pop on the grill,

turning once the skins have blistered and split.

Slice your ciabatta loaves in half and drizzle lightly with oil. Toast on the grill on both sides

until golden. Rub lightly with a garlic clove.

Julienne a courgette and mix with the juice of half a lemon and a sprinkle of salt for

seasoning.

Smooth a generous spoonful of whipped feta onto your ciabatta. Top with the lemony

courgette and finish with your blistered tomatoes.
