Baked Beans

Beans are rich in fibre, good for you and come in all different shapes and sizes. Why not try a 5 bean breakfast?

Ingredients

  • 1 large onion
  • 1 red pepper 
  • 1 chilli 
  • 1 clove of garlic
  • 1 tbsp oil 
  • 2 x 400g tins of beans (any beans you fancy!)
  • 2 x 400g tins of plum tomatoes 
  • 1 tbsp balsamic vinegar 
  • bread to serve

  • 1 large onion
  • 1 red pepper
  • 1 chilli
  • 1 clove of garlic
  • 1 tbsp oil
  • 2 x 400g tins of beans (any beans you fancy!)
  • 2 x 400g tins of plum tomatoes
  • 1 tbsp balsamic vinegar
  • bread to serve

Finely slice your onion, pepper, chilli and garlic.

Pop a pan on medium heat with 1 tbsp oil and soften your onions and peppers. Allow to soften for 3-4 minutes and then add your garlic and chilli and soften for another 2 minutes.

Add your plum tomatoes and give them a mash until relatively smooth. Drain and rinse your beans and add to the pan.

Leave on the heat to simmer for 10-15 minutes until it gets nice and thick.

Drizzle in balsamic and season to taste. Serve up on a slab of farmhouse loaf. What a winner!
