Peach Galette

A rustic summer dessert that looks effortlessly chic but takes just minutes to prepare.

Ingredients

  • 1 sheet Jus-Rol puff pastry (approx. 320g)
  • 2 ripe peaches, destoned and thinly sliced (skin on)
  • ½ tsp ground cinnamon
  • 20g unsalted butter, melted
  • 1 tbsp demerara sugar
  • 1 tbsp apricot jam
  • Double cream, to serve

  • 1 tbsp apricot jam
  • Double cream, to serve

Method

  1. Prepare the pastry
    Preheat the oven to 180°C (fan 160°C/gas mark 4). Unroll the puff pastry and cut out a disc using a salad plate as a template. Place on a lined baking tray.

  2. Slice the peaches
    Toss the sliced peaches in a bowl with the ground cinnamon until lightly coated.

  3. Assemble the galette
    Arrange the peach slices neatly over the pastry, leaving a 2cm border around the edge. Brush the fruit with melted butter and sprinkle with demerara sugar.

  4. Bake
    Place in the oven for 20–25 minutes, or until the pastry is golden and puffed.

  5. Glaze & serve
    While still hot, brush the peaches with apricot jam for a glossy finish. Allow to cool slightly, then serve warm with a generous spoonful of double cream.
