White Choc Cookies

I can’t explain how good these are. OUTRAGEOUS.

Ingredients

  • 120g butter, room temperature
  • 100g light brown sugar
  • 100g granulated sugar
  • 1 large free-range egg
  • 1 tsp vanilla bean paste
  • 260g plain flour
  • ½ tsp baking powder
  • ½ bicarbonate of soda
  • Pinch of salt
  • 150g white cooking chocolate
  • 150g frozen raspberries

Preheat your oven to 180°C/350°F/gas 4.

In a bowl, cream together the butter and sugar, then whisk in the egg and vanilla. Sift in your dry ingredients and mix, and add in your chunks of white chocolate. Finally in go the raspberries and give it a brief mix to distribute them.

Onto a lined baking tray place golf ball sized blobs of the mix , well spaced out. Pop them straight in the oven for 15 – 20 minutes until golden but the middle still gorgeously gooey.
