Ingredients

  • 150g crumbled feta cheese

  • ½ lemon, juice of

  • 165g frozen peas
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Cook the peas for 3 minutes in boiling water until tender. Drain the peas and transfer them to a bowl of ice water to cool down quickly. Once cooled, drain the peas again and set aside.

Using your food processor attachment on the Bosch Ergomixx, combine the cooked peas, crumbled feta cheese, fresh mint leaves, lemon juice, minced garlic, and extra virgin olive oil. Pulse the mixture until smooth and creamy. If desired, you can leave some texture by pulsing it less.

Taste the dip and season with salt and pepper according to your preference. Adjust the lemon juice or olive oil if needed for balance.

Refrigerate for at least 30 minutes to allow the flavours to meld together. Before serving, garnish the dip with a drizzle of olive oil and a few fresh mint leaves. Serve with an assortment of dippers such as pita chips, sliced vegetables, or crackers.
