- 1 watermelon
- handful fresh mint
- 1 lime, juice of
- 200ml vodka/gin/light rum
- 2 tbsp caster sugar (or to taste)
Cut the top off your watermelon to create a lid. You may need to trim the bottom of your watermelon just enough to make a flat surface so it can stand without risk of toppling. Scoop out flesh.
Working in batches, puree your watermelon flesh in a food processor. Strain through a fine sieve and discard the solids. Combine the juice with your mint, spirit, lime and sugar and decant into your watermelon to serve.
Serve with ice!
