If it's good enough for Gigi Hadid, it's good enough for me! Deliciously rich, creamy and tangy vodka pasta in just 20 minutes.
Ingredients
- 200g penne
- 1 tbsp olive oil
- 1/2 white onion, finely chopped
- 2 garlic cloves, finely sliced
- 3 tbsp tomato paste
- 180ml double cream
- 25ml vodka
- 2 tsp dried chilli flakes
- 30g parmesan cheese, grated
- 30g butter
- basil leaves (for serving)
- 200g penne

- 180ml double cream
- 25ml vodka

- 30g parmesan cheese, grated

Cook your pasta in boiling salted water until al dente.
Heat a large saucepan on low -medium heat with olive oil. Add the onions and soften for 10 minutes, add the garlic and cook for a further 2-3 minutes. Add the tomato paste and cook until the colour darkens a little (2-3 minutes).
Pour in the vodka and cream and allow to bubble away until reduced. Stir in the chilli flakes.
Drain your pasta, keeping hold of a cup of the pasta water.
Add the pasta to the sauce with butter and parmesan. Gently loosen to your desired thickness with the pasta water.
Season to taste and serve.
