Ingredients
- ½ cabbage, shredded
- 3 baby cucumbers (or ¾ of a normal cucumber), diced into small cubes
- 3 spring onions, finely sliced
- ½ bunch of chives (10g)
- 1 ½ tbsp oil
- 1 tbsp rice vinegar (or ½ tbsp white wine vinegar)
- 1 lemon, juice of
- ½ salt
- 30g nuts (cashews, walnuts or pine nuts)
- 2 tsp nutritional yeast
- 1 shallot
- 1 garlic clove
- ½ bunch of basil
- big handful of spinach

Chop and add the following to a bowl for the salad…
