Ultimate Garlic Bread

When you roast garlic, you unleash a whole new level of flavour. That's what makes this garlic bread so darn special!

Ingredients

  • two bulbs of garlic 
  • 150g softened butter
  • 2 tbsp chopped parsley 
  • Optional - 125g grated mozzarella, 125g grated mature cheddar 
  • Your favourite loaf 
  • Salt and pepper for seasoning

The first thing you need to do is slice off the very tops of your garlic bulbs. Enough that the cloves are exposed. Then place each of them in the centre of some tin foil with a drizzle of oil and a sprinkle of salt and pepper and wrap them tightly. These are then going to go into the oven at 200°C/400°F/gas 6 for 35 minutes.

Meanwhile, slice up your chosen bread however you fancy. I have used a sourdough loaf and sliced a criss-cross about two-thirds of the way down to create a ‘hedgehog like’ loaf aka. lots of nooks and crannies to stuff my garlic butter.

When the garlic has finished roasting, squeeze out the cloves and dispose of the skins and mix with the butter and parsley. You can also throw in the cheese if you want to make it epic! Season with a touch more salt and pepper and then squeeze it into every crease of your bread.

Put this in the oven for a further 15-20 minutes until the bread has gone golden, the cheese has melted and everything has completely warmed through. Enjoy!
