Ingredients
- 1kg turkey mince (500g turkey breast mince, 500g turkey thigh mince)
- 2-inches of ginger, finely chopped
- 2 cloves of garlic, crushed
- 1 fresh chilli, finely chopped
- 4 spring onions, finely chopped
- 1/2 bunch of coriander (stalks and leaves), finely chopped
- 3 sprigs of mint leaves, finely chopped
- generous tbsp soy sauce
- splash of groundnut oilÂ
- 1 tbsp sesame seeds

Combine all of your ingredients in a bowl (if you want a chunky, meaty patty, be sure not to over scrunch it).
Split your mixture into 6 generous patties.
They are ready to cook at this point BUT if you need them to bind more, add a splash of water and/or stick your patties in the fridge to set for at least an hour.
Add 1 tsp groundnut oil into a pan on high heat. Pop in your patties and let them seal for 4 minutes on one side. Flip them over and reduce the heat to medium. They will likely need 10-15 minutes to cook through thoroughly and they must be cooked through thoroughly. Keep turning them so they colour evenly on both sides.
Finish up with a sprinkling of sesame seeds and serve in a bun or between lettuce leaves (naked) for an even healthier dinner.
