Tuna Butterbean Salad

Ingredients

  • 400g canned butterbeans, rinsed and drained
  • 200g canned tuna, drained
  • 1 small red onion, finely chopped
  • 1 tsp capers
  • 1 cucumber, diced
  • 200g cherry tomatoes, halved
  • 50g black olives, pitted and sliced
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

  • 1 cucumber, diced
  • 200g cherry tomatoes, halved

Drain the butterbeans and toast in a pan with a glug of oil until crispy on both sides.

In a large mixing bowl, combine the drained tuna, chopped red onion, diced cucumber, halved cherry tomatoes, sliced black olives, capers and chopped parsley to the bowl.

In a separate small bowl, whisk together the lemon juice and extra virgin olive oil. Season with salt and pepper to taste.

Pour the dressing over the salad ingredients in the large mixing bowl.

Gently toss all the ingredients together until well combined, throwing in the toasted beans at the last moment.

Taste and adjust the seasoning if needed.

Transfer the salad to a serving dish or individual plates.

Serve immediately as a light lunch or dinner option.
