#ChallengePix is a series of videos where friends challenge me with up to 5 ingredients to make a dish. Today's dish is Tomato Gnocchi!
Ingredients
- 1 onion
- 1 sweet pepper (any colour)
- 500g gnocchi
- 100g cheddar cheese
- 1 x 400g tin cherry tomatoes (or any tinned tomatoes will work!)

Heat grill to high.
Heat 1 tbsp olive oil in a large frying pan, then soften 1 chopped onion and 1 finely chopped sweet pepper for 5 minutes.
Tip in 400g of tinned cherry tomatoes, 500g gnocchi and 1 vegetable stockpot/cube.
Add 100ml water, then bring to a simmer. Bubble for 10-15 mins, stirring occasionally until the gnocchi is soft and the sauce has thickened. Scatter with grated cheddar then grill for 5-6 mins until the cheese is bubbling and golden.
