Ingredients

  • 300ml double cream⁣
  • 1 tbsp sugar⁣
  • 100g chocolate, roughly chopped⁣
  • 40g flaked almonds⁣
  • strawberries and raspberries for garnish⁣ ⁣

Make a ganache by bringing 150ml double cream and 1 tbsp sugar to the boil, then quickly remove from the heat, pour over the chocolate and whisk until smooth and glossy. Leave to cool down.

Whisk the remaining 150ml into stiff peaks. Fold into your cooled ganache to make a delicious mousse.

Toast your almonds in a hot pan and slice up your fruit. Sprinkle and serve.
