Sumak Roasted Carrot Salad With An Orange Dressing

Ingredients

  • 450g carrots, snapped into chunks 
  • 1 tbsp sumac
  • 1 orange, segmented 
  • 150g feta, crumbled 
  • 150g giant couscous
  • 1/2 bunch parsley, finely chopped
  • 2 tsp white wine vinegar
  • 1 orange, zest and juice 
  • 2 tsp honey
  • 1 tbsp Dijon mustard
  • 4 tbsp olive oil
  • 2 shallots, finely chopped 
  • Season generously with salt and pepper

Salad

  • 450g carrots, snapped into chunks
  • 1 tbsp sumac
  • 1 orange, segmented
  • 150g feta, crumbled
  • 150g giant couscous
  • 1/2 bunch parsley, finely chopped

Dressing

  • 2 tsp white wine vinegar
  • 1 orange, zest and juice
  • 2 tsp honey
  • 1 tbsp Dijon mustard
  • 4 tbsp olive oil
  • 2 shallots, finely chopped
  • Season generously with salt and pepper

Preheat your oven to 200°C/400°F/gas 6.

Cook the carrots: Place the sliced carrots on a baking sheet. Drizzle with olive oil, sprinkle sumac, salt, and pepper. Toss to coat evenly. Roast in the preheated oven for about 20-25 minutes or until the carrots are tender and slightly caramelized.

Cook Giant Couscous: In a saucepan, bring water or vegetable broth to a boil. Add the giant couscous, reduce heat to low, cover, and simmer for about 15 minutes or until the couscous is tender. Drain any excess liquid.

Prepare Orange Dressing: In a small bowl, whisk together your dressing ingredients until well combined.

In a large mixing bowl, combine the roasted carrots, cooked giant couscous, segmented orange, parsley and crumbled feta cheese. Pour the orange dressing over the salad and toss gently to combine.
