Your favourite festive spiced latte in blondie form.
Ingredients
- 250g softened unsalted butter, cubed
- 300g light brown sugar
- 3 large free-range eggs
- 1 tsp vanilla extract
- 250g plain flour
- 2 tsp cornflour
- 1 tsp baking powder
- 1/2 tsp ground nutmeg
- 3/4 tsp ground ginger
- 1 tsp ground cinnamon
- pinch of cloves
- 1 tsp salt
- 120g mixed dried fruit (apricots, figs, cranberries and prunes)
- 100g white chocolate

Beat your sugar and butter together until light and fluffy. Add your eggs one at a time and continue to beat. They lovingly fold in the rest of your ingredients.
Decant into a lined square baking tin and bake in a preheated oven at 180°C/350°F/gas 4 for 30 minutes.
