Spiced Blondies

Your favourite festive spiced latte in blondie form.

Ingredients

  • 250g softened unsalted butter, cubed
  • 300g light brown sugar
  • 3 large free-range eggs
  • 1 tsp vanilla extract
  • 250g plain flour
  • 2 tsp cornflour 
  • 1 tsp baking powder
  • 1/2 tsp ground nutmeg 
  • 3/4 tsp ground ginger
  • 1 tsp ground cinnamon 
  • pinch of cloves 
  • 1 tsp salt 
  • 120g mixed dried fruit (apricots, figs, cranberries and prunes)
  • 100g white chocolate

  • 250g softened unsalted butter, cubed
  • 300g light brown sugar

  • 1 tsp baking powder

  • 3/4 tsp ground ginger
  • 1 tsp ground cinnamon
  • pinch of cloves
  • 1 tsp salt
  • 120g mixed dried fruit (apricots, figs, cranberries and prunes)
  • 100g white chocolate

Beat your sugar and butter together until light and fluffy. Add your eggs one at a time and continue to beat. They lovingly fold in the rest of your ingredients.

Decant into a lined square baking tin and bake in a preheated oven at 180°C/350°F/gas 4 for 30 minutes.
