Speedy Berry Compote

The simplest berry compote for a fruity little flourish to ice cream, porridge, pancakes or chocolate bakes!

Ingredients

  • 1 x 300g bag of frozen berries (strawberries, raspberries)
  • 1 tbsp water 
  • 1/2 lemon, juice of
  • a sweetener - agave syrup, honey, maple syrup or sugar

Add your frozen fruit to a pan with water and lemon. Pop on medium-high heat and bring to the boil for 7 minutes. When it coats the back of the spoon it’s a perfect consistency. Add sweetener to your desired taste.

If you want a smooth sauce then sieve out the seeds. As it cools it will thicken and go jam-like.

This will work with lots of frozen fruits so why not try a mango compote or a pineapple compote or even a banana… wait no, not that!
