A super speedy special fried rice with sweet pops of green peas, salty soy sauce and fluffy rice and egg. Delicious midweek meal.
Ingredients
- 3 spring onions, finely sliced
- 2cm ginger, finely sliced
- 2 garlic cloves, crushed
- 200g pre-cooked rice (day-old rice works best)
- 100g frozen peas
- 2 tbsp chilli jam
- 3 eggs, beaten
- 200g silken tofu, crumbled
- 1 tbsp soy sauce

- 2 tbsp chilli jam
- 3 eggs, beaten

- 1 tbsp soy sauce
Get a wok (or large saucepan) on high heat with 1 tbsp oil.
Fry your onion, ginger and garlic for a minute. Add in your day-old rice, peas and chilli jam with a splash of water and stir on high for 2-3 minutes.
Make a well in the middle and add your beaten eggs and crumbled tofu and stir vigorously to evenly spread the egg throughout the rice. It should only take 2 minutes for the egg to cook.
Drizzle over the soy sauce and serve!
