Discover the refreshing twist on a traditional Thai favourite: Som Tam Salad with Green Apple! This innovative adaptation brings a unique crunch and sweet-tart flavour to the classic dish.
Ingredients
- ½ red chilli, finely chopped
- 1 clove garlic, crushed
- 1 tsp caster sugar
- 1 heaped tbsp roasted peanuts
- 1 lime, juice of
- 3 tbsp fish sauce
- 6 green beans, chopped into 2cm chunks
- 4 cherry tomatoes, quartered
- 2 green apple, julienned
- 1 large carrot, julienned

- 3 tbsp fish sauce

Grab a pestle and mortar (or a bowl and a rolling pin!) and add your chilli, garlic and sugar. Crush into a paste. Add the peanuts and give them a bash so they start to crumble. Add your lime juice and fish sauce and stir. Add your green beans and cherry tomatoes, give everything a quick bosh to combine, and lightly bruise your veggies.
Add your julienned carrot and apple to a bowl and pour over the contents of your pestle and mortar. Toss everything through using a spoon and your pestle (or rolling pin). As you gently pound your salad it will soften with the acids of the sauce and the carrot and apple will wilt a little. Serve with a sprinkle of extra peanuts and enjoy!
