So simple it's not even a recipe! No-cook smoked salmon pâté.
Ingredients
- 250g ricotta
- Half a lemon, juiced
- 1 tbsp olive oil
- salt and white pepper to season
- 3 tbsp double cream
- 100g of smoked salmon, roughly chopped
- 2 tsp fresh chive, finely chopped

Add the ricotta to a blender with the lemon juice, oil and a pinch of salt and white pepper. Give it a blend until it’s smooth and starting to fluff up. A drizzle of cream will help to loosen the mixture to the right consistency. Add in the salmon and pulse to combine, but we still want to see flecks of salmon in the mixture. Mix in the chives, check the seasoning and voila! So impressive and so simple.
