Trick your kids (or yourself) into eating their greens with these simple spinach pancakes.
Ingredients
- 110g spinach
- 110ml milk
- 1 tsp apple cider vinegar
- 1 egg
- 80g flour
- 1 tbsp caster sugar
- 1 tsp baking powder
- pinch of salt

Blitz your spinach, milk and vinegar together until it is a smooth liquid. Whisk in your egg and then the rest of your ingredients and your batter is done.
Drizzle some oil in a pan on medium heat with a knob of butter. Decant any excess – this can be used to top up your pan’s non-stick between pancakes. Pour a ladle of batter into the pan and cook for 1-2 minutes until bubbles form on the surface. Flip and repeat on the other side.
