Wash the spinach thoroughly and blanch in boiling water for 20-30 seconds to wilt and dunk into icy water. Drain and squeeze to remove water.
In a blender, combine the milk, eggs, flour, and salt. Blend until smooth. Add the chopped spinach to the batter and mix well.
Heat a non-stick pan over medium heat and lightly grease it with butter or oil.
