  • 300ml milk

Wash the spinach thoroughly and blanch in boiling water for 20-30 seconds to wilt and dunk into icy water. Drain and squeeze to remove water.

In a blender, combine the milk, eggs, flour, and salt. Blend until smooth. Add the chopped spinach to the batter and mix well.

Heat a non-stick pan over medium heat and lightly grease it with butter or oil.

Pour a ladleful of the batter into the pan, swirling it around to spread evenly. Cook for about 2 minutes until the edges start to lift, then flip the crepe and cook for another minute.

Repeat with the remaining batter. Serve the spinach French crepes warm with your favourite toppings or fillings.
