Scone Pizza

Inspired by Rosie and Chris Ramsey's Podcast 'Shagged Married Annoyed', I thought I would attempt the provocative 'Scone Pizza'!

Ingredients

  • 250g self-raising flour 
  • 1/4 tsp salt 
  • 150ml buttermilk 
  • Toppings of your choice!

Preheat the oven to 200°C/400°F/gas 6.

Mix together your flour, salt and butter either in a food processor or by hand, turning it into breadcrumbs. The trick to scones is to handle them as little as possible, so I love using the food processor for this stage so my warm hands don’t melt the butter.

Then add your buttermilk and using a knife mix it together until it has JUST combined.  Remember – don’t overwork your dough!

Flatten your dough into 1-2cm thickness into a rough circle onto a lined baking tray. Bake in the oven for 15 minutes.

Remove and top with your favourite toppings then pop back into the oven for another 7-8 minutes until everything has gone gorgeously golden and melted.

Slice and serve.
