Fresh, zingy summer salsa. A brilliant dip for your dinner parties and stunning spread over nachos or stirred through a salad.
Ingredients
- 6 vine-ripened tomatoes, roughly chopped
- 1 red onion, finely chopped
- 2 tbsp cider vinegar
- 1 bunch coriander, finely chopped
- 1 red chilli, finely chopped
- 1/2 tsp ground cumin
- 1 lime, juice of

Roughly chop your tomatoes, season with a generous pinch of salt and pop them in a sieve to drain. This will get rid of excess water and intensify your tomato flavour.
Chop your onions and add to a bowl with your vinegar. Leave them to soak for 3-4 minutes. Scrunch them to soften them and mix with your drained tomatoes, coriander, chilli, cumin and lime. Season with some black pepper and more salt if needed.
