Ingredients
- 200g tomatoes
- 1/4 red onion, finely chopped
- 1 avocado, diced
- 1 chilli, finely chopped
- Small handful coriander, leaves only, chopped
- 1 tbsp oil
- 1/2 lime, juiced
- Salt and pepper to season

Dice the tomatoes into small cubes and pop in a sieve suspended over a bowl. Salt them and let the excess moisture drain.
In a bowl add the onion and avocado (only if you’re ready to serve – if not it will go mushy!). Add the chilli, as much as you can handle, and the coriander, lime and seasoning.
Mix in the tomatoes and it’s that simple!
