Ingredients
- 30g bunch parsley
- 10g bunch chives
- 1 small garlic clove
- 10g bunch dill
- 4 sprigs of mint, just the leaves
- 1 lemon, juiced
- 1 lemon, sliced
- 3 tbsp olive oil
- 1 side of salmon

- 1 side of salmon
In a blender put the parsley, chives, garlic, dill, mint, lemon juice and the oil. Blitz it up, then set it aside.
Cut the salmon into chunks and onto your skewers, alternate the salmon chunks with folded slices of lemon. Brush the skewers with the herby dressing.
In a hot pan or griddle pan, cook the skewers for about two to three minutes until golden on all sides. Brush with extra dressing as you go, and serve with salad or cous cous.
Monkfish, cod or haddock would also be delicious!
