Sticky, delicious and ridiculously simple ribs. Perfect for the Summer and an easy one to prep ahead.

- 1-inch ginger
- 1/2 fresh chilli
- 1 tsp Chinese five-spice
- 2 garlic cloves
- 1 tbsp Worcestershire sauce
- 2 tbsp soy sauce
- 4 tbsp honey
- 500g passata
- 1kg pork ribs

Preheat your oven to 200°C/400°F/gas 6.
Speedily create your marinade in a food processor. Add your ginger, chilli, garlic, Worcestershire sauce, soy sauce, honey and passata.
Drench your ribs in the marinade and leave them overnight in the fridge if possible. This will give the flavour an extra chance to penetrate the ribs.
To cook, space out your ribs on a baking tray. Pour over any marinade (don’t waste a drop). Cover it with foil and cook for 35 minutes. The next step is to remove the foil, turn them and finish cooking for a further 45 minutes. If you’re preparing ahead of time, you can remove them from the oven at the 35-minute mark and store them in the fridge when cool and finish cooking at your desired time/location.
