A Pot Noodle you can feel proud of. Simply layer up the ingredients for a healthy, speedy lunch with all the familiar flavours of a Chicken Pot Noodle.
Ingredients
- 1/2 chicken stock cube
- 1 tsp tomato ketchup
- 1 tsp coconut cream
- 1 heaped tsp curry powder
- 1/2 lemon, juice of
- 1 tsp cornflour
- 150g pre-cooked noodles
- 1/4 red pepper
- 1 handful spinach
- 1/4 bunch of coriander (optional)
- 1 handful of cooked chicken
- 1/2 chicken stock cube
- 1 tsp tomato ketchup
- 1 tsp coconut cream
- 1 heaped tsp curry powder
- 1/2 lemon, juice of
- 1 tsp cornflour
- 150g pre-cooked noodles
- 1/4 red pepper
- 1 handful spinach
- 1/4 bunch of coriander (optional)
- 1 handful of cooked chicken
Mix together the crumbled stock cube, ketchup, coconut, curry powder, lemon and cornflour with a splash of water in a Kilner jar or sizable heatproof lunchbox.
Layer on your noodle, pepper, spinach, coriander and chicken.
When you’re ready to eat, add 450ml of boiling water, mix and leave to sit, covered, for at least 2 minutes. Mix again and tuck in.
