  • 2kg plums
  • 600ml cold water
  • 2kg jam sugar (high-pectin sugar)

Half the plum and remove the stones. Give them a thorough wash with cold, clean water.

Add to a large, deep saucepan with 600ml water. Bring to the boil and reduce. Simmer for 45 minutes, stirring occasionally.

Once your plums have reduced by half, add 2kg jam sugar. Make sure it is fully dissolved and then bring to a rolling boil for 4-5minute.

Test how set your jam is by spooning a little onto a cold plate. If you push it and it wrinkles, you have a perfect consistency.

Decant into sterilised jars and enjoy.
