A taste of Wimbledon, these Pimm's Jelly Cups are easily transportable, sweet and boozy. Perfect picnic food for the adults!
Ingredients
- 7 gelatine leaves
- 400ml clear apple juice
- 200ml cloudy lemonade
- 1 heaped tbsp golden caster sugar
- 250ml Pimm's
- strawberries, mint, mandarins and cucumber for garnish

Put your gelatine leaves in a bowl of cold water to soften for 5 minutes.
Heat the apple juice, lemonade and sugar until steaming. Squeeze excess water from the gelatine and add the leaves to the pan one at a time. Stirring to dissolve.
Remove the mixture from the heat and add the Pimm’s.
Half fill your serving jar with cucumber, mint, mandarins and strawberries and pour over the Pimm’s mixture.
Pop in the fridge to set for 6-8 hours and garnish with fresh mint and fruit.
