Smoked Salmon & Cream Cheese Pasta

Watched my nephews ploughing into a bowl of Philadelphia pasta and felt completely left out. So I made an adult tweak and tucked in alongside.

Ingredients

  • 200g conchiglie pasta
  • 100g smoked salmon, sliced
  • 100g Philadelphia cream cheese
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 4 tbsp Basil pesto

Cook the conchiglie pasta according to package instructions until al dente. Drain and set aside.

In a pan over low heat, melt the Philadelphia cream cheese until smooth. If the sauce is too thick, you can loosen it with a bit of water.

Add the lemon zest to the melted cream cheese and stir well to incorporate.

Toss the cooked pasta in the cream cheese mixture until evenly coated.

Add the sliced smoked salmon to the pasta and gently mix it in.

Finish by squeezing the lemon juice over the pasta and tossing everything together.

Serve the smoked salmon and cream cheese pasta on plates and drizzle with basil pesto before serving.
