Pea Houmous

Pea Houmous with griddled asparagus - a speedy, healthy lunch that can help you get back on the #FibreFit train!

Ingredients

  • 300g peas
  • 1 tbsp houmous
  • 4 sprigs of mint, leaves
  • 6 asparagus, sliced in half lengthways and grilled
  • 2 Ryvita
  • 20g feta, crumbled

Cook peas in boiling salted water for 4 minutes.

Add to a blender with houmous and mint and season.

Griddle asparagus on high heat.

Layer on a cracker and sprinkle with feta.
