Pea Houmous with griddled asparagus - a speedy, healthy lunch that can help you get back on the #FibreFit train!
Ingredients
- 300g peas
- 1 tbsp houmous
- 4 sprigs of mint, leaves
- 6 asparagus, sliced in half lengthways and grilled
- 2 Ryvita
- 20g feta, crumbled

Cook peas in boiling salted water for 4 minutes.
Add to a blender with houmous and mint and season.
Griddle asparagus on high heat.
Layer on a cracker and sprinkle with feta.
