A perfect orzo pasta summer salad – super-simple, tasty, and great for a light lunch or served as a side dish at a barbecue.
Ingredients
- 250g cooked orzo pasta
- 2 peppadew peppers
- 1 clove garlic
- ½ red onion
- 20g fresh chives
- 20g fresh basil
- olive oil
- sea and pepper for seasoning

Cook your orzo pasta as per packet instructions. Finely chop your garlic and red onion and add to a pan on medium heat, to soften. Drain your peppadew peppers and roughly chop, adding to the pan, too!
Drain your orzo pasta and add to the pan once your vegetables have softened.
Chop your chives and shred your basil, adding to the salad with a generous glug of good quality olive oil and salt & pepper to season.
This dish pairs perfectly with Saucy Salmon with Chilli, Lime and Ginger Dressing.
