Mark Ferris’ Parsnip Gnocchi

Ingredients

  • 2 parsnips ⁣
  • 500g gnocchi⁣
  • 170g cream cheese⁣
  • 200g broccoli/asparagus ⁣
  • 2 spring onions

⁣Peel and trim your parsnips. Boil in salted water for 7-8 minutes. Drain, keeping hold of some of the drained water. Add your parsnips into a blender, with your cream cheese, spring onion and 150ml of drained water. Blitz and season as desired. ⁣

In a pan add a tablespoon of oil and add your broccoli, frying for 3-4 minutes until golden and the green has brightened. ⁣

In a pan of boiling water, add your gnocchi for 2 minutes or until it starts to float. Decant to your oiled pan and fry for 3-4 minutes until golden Add back your broccoli and you’re your sauce. Stir and serve!
