#ChallengePix is a series of videos where friends challenge me with up to 5 ingredients to make a dish. Today's dish is Parsnip Gnocchi!
Ingredients
- 2 parsnips
- 500g gnocchi
- 170g cream cheese
- 200g broccoli/asparagus
- 2 spring onions

Peel and trim your parsnips. Boil in salted water for 7-8 minutes. Drain, keeping hold of some of the drained water. Add your parsnips into a blender, with your cream cheese, spring onion and 150ml of drained water. Blitz and season as desired.
In a pan add a tablespoon of oil and add your broccoli, frying for 3-4 minutes until golden and the green has brightened.
In a pan of boiling water, add your gnocchi for 2 minutes or until it starts to float. Decant to your oiled pan and fry for 3-4 minutes until golden Add back your broccoli and you’re your sauce. Stir and serve!
