Fresh, sweet nectarine with salty feta and a zingy basil dressing make for the perfect Summer salad.
Ingredients
- 100g salad leaves (rocket, baby leaf and lambs lettuce is a great combo)
- 2 nectarines, sliced
- 100g feta, crumbled
- 80g walnuts, roughly chopped
- 1/2 bunch of basil
- salt
- 4 tbsp oil
- 1 tbsp vinegar

Mix your salad leaves, nectarines, feta and walnut. Blitz the basil, salt, oil and vinegar into a smooth dressing. Pour over and toss everything through.
