Homemade Nandos-Style Peri Peri Sauce

Spicy, fresh, earthy and sweet - my Piri Piri sauce inspired by Nandos is super duper simple AND lip-smackingly delicious.

Ingredients

  • 16 tbsp of extra virgin olive oil
  • 3 tbsp of garlic powder
  • 2 lemons, juice of
  • 2 tbsp paprika
  • 1 tbsp of cayenne pepper
  • 1 tbsp salt
  • 1 tbsp of cider vinegar
  • 1 sweet red pepper
  • 3-4 chillies medium, 4-6 Hot, 6-8 extra hot.

  • 16 tbsp of extra virgin olive oil
  • 3 tbsp of garlic powder
  • 2 lemons, juice of
  • 2 tbsp paprika
  • 1 tbsp of cayenne pepper
  • 1 tbsp salt
  • 1 tbsp of cider vinegar
  • 1 sweet red pepper
  • 3-4 chillies medium, 4-6 Hot, 6-8 extra hot

Mix the above in a blender until completely liquidized. Pour into a bottle and refrigerate – it’ll store for up to 6 weeks!

To marinade: Spoon over and massage the marinade into 400g of chicken, ensuring that every bit of it is well coated. Cover the dish with cling film and leave the chicken to marinate in the fridge for at least 4 hours or, ideally, overnight. Cook and enjoy!
