Ingredients
- 4 slice of thick white bread, toasted
- 1/2 avocado, smashed
- 1/2 lemon, juice of
- 4 rashers of smoked streaky bacon
- cracked black pepper
- 1/2 cos lettuce
- 1 chicken breast
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1 small vine tomato
- 1 tbsp mayonnaise
- 4 slice of thick white bread, toasted
- 1/2 avocado, smashed
- 1/2 lemon, juice of
- 4 rashers of smoked streaky bacon
- cracked black pepper
- 1/2 cos lettuce
- 1 chicken breast
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1 small vine tomato
- 1 tbsp mayonnaise
Prepare your ingredients.
Slice your tomatoes and sprinkle with salt. Suspend in a sieve over a bowl to drain excess moisture.
Scoop out the avocado and smash it together with the lemon and a pinch of salt and pepper, using a fork.
Finely shred your cos lettuce.
Cover your bacon in cracked black pepper and fry until crispy.
Slice your chicken breast into thin strips and sprinkle with paprika and cayenne pepper. Fry in your bacon pan for 7 minutes, turning halfway through.
Toast the bread.
Assemble in the following order…
- toast
- half your avocado
- 2 rashers of bacon
- handful of cos
- toast
- 2 tbsp mayonnaise
- chicken
- tomato
- toast
- another half of your avocado
- 2 rashers of bacon
- handful of cos
- toast
