Mediterranean Pasta Salad

This easy summer pasta salad recipe is perfect for a quick and delicious meal on a hot day. It's packed with fresh vegetables and herbs, and can be customised to your liking.

Ingredients

  • 300g fusilli pasta
  • ½ red onion, finely diced
  • 2 tbsp white wine vinegar
  • 250g tomatoes, quartered
  • 100g black olives
  • 150g spinach
  • 100g feta, crumbled or cubed
  • 1 tbsp olive oil

Cook your pasta until al dente.

Finely dice your red onion and add to a bowl with 2 tbsp white wine vinegar and a pinch of salt.

Quarter your cherry tomatoes and add to a sieve with a pinch of salt. This is going to drain excess liquid and intensify the sweetness of your tomatoes.

Once your pasta is cooked, add 150g of spinach to the colander and rinse. Pour over your cooked pasta and hot salty water so it wilts the spinach and throw it into your bowl with the onions.

Add the black olives, drained tomatoes, crumbled feta, and 1 tbsp olive oil, and give a good stir.

Season as required.
