Meatballs

  • 1 onion
  • 250g beef mince
  • 250g pork mince
  • 1 heaped tsp fresh rosemary
  • 1 heaped tsp fresh thyme
  • 1 heaped tsp fresh oregano
  • handful of breadcrumbs
  • 1 egg
  • salt & pepper to season

Finely chop and soften your onions with a sprinkle of salt in a pan on medium-low heat. Leave to cool before adding to a bowl with your mince, finely chopped herbs, breadcrumbs, egg and seasoning.

Roll your mix into ping pong sized balls. Seal in a pan on high heat (so they are coloured on all sides) and remove. Using the same pan make your passata…

Passata

  • 1 tbsp olive oil
  • 2 garlic cloves
  • 1/2 onion
  • 1kg jar of passata
  • 1 tsp dried chilli flakes
  • 2 stalks of fresh basil leaves
  • salt & pepper to season

Finely dice your onion and soften in 1 tbsp oil with 2 squashed garlic cloves for 4-5 minutes. Remove the garlic cloves and add the passata and chilli flakes.

Blip for 5 – 10 minutes on medium heat, and reduce to almost desired consistency.

Add the meatballs, cover with a lid on and roast for 15 minutes at 200°C/400°F/gas 6.

Stir in fresh basil, season and spoon onto ciabatta or pasta!
