The perfect (non-vegan) accompaniment to my vegan egg-nogg!
Ingredients
- 4 eggs, yolks and whites separated
- 120g golden caster sugar
- 1 tsp vanilla bean paste
- 120g plain flour
- 1 tsp ground cinnamon
- Icing sugar for dusting

Preheat the oven to 180°C/350°F/gas 4.
Mix the egg yolks with 60g of the caster sugar with an electric whisk until fluffy, adding in the vanilla bean paste.
In a separate bowl, whisk the egg whites, slowly adding in the remaining 60g of caster sugar, until you have lovely soft peaks. Carefully fold together the egg mixtures keeping as much air in there as possible. Sieve in the flour and cinnamon and fold until smooth.
Decant your mixture into a piping bag and on a lined tray, pipe your finger shapes with a good bit of distance between them. Cook for 12 – 15 minutes. Keep an eye on them and take out when golden. Dust with icing sugar and enjoy!
