The salt, the tang, the sweet, the zing!
Ingredients
- ½ large watermelon
- 200g feta
- ½ red onion
- 1 lemon, juiced
- 2 tbsp honey
- 2 tsp pink peppercorns
- 8-10 sprigs of mint, leaves only
- 100ml olive oil
- Salt for seasoning

Dice the watermelon and slice the onion finely. Pop them in a bowl and crumble the feta in.
To make the dressing, mix the lemon juice, honey, peppercorns, mint, oil and salt. It’s quite thick because the watermelon releases plenty of lovely juice! Add to the salad and give it a good toss.
