A sweet treat today with these outrageously easy Jam Tarts!
Ingredients
- 160g of plain flour
- 1 heaped tbsp caster sugar
- 80g cold cubed butter
- 1 vanilla pod, seeds only
- 1 egg yolk
- Jam of your choice

Preheat your oven to 180°C/350°F/gas 4.
In a bowl mix the flour and sugar, then rub in the butter using your finger tips to make a breadcrumb. Add in the vanilla seeds and the yolk. Use a knife to start bringing the mixture together, adding a tiny drizzle of water at a time to help the dough form. You do not want to put too much in! Wrap the dough in clingfilm and pop it in the fridge.
Once it’s firmed up, roll it out on a floured surface to the thickness of a one pound coin, and cut out your discs for your tarts. Grease your tray and add in the pastry. Next add a generous dollop of jam to each pastry case. Bake them in the oven for 18 – 20 minutes until the jam bubbles.
Leave them to cool before you tuck in!
