You say salad, you think healthy - but this ain't it!
Ingredients
- 5 rashes of streaky bacon
- 1 pear, cored and sliced
- 25g butter
- 150g goats cheese
- Spicy honey (or normal honey will do)
- 2 tbsp olive oil
- 1 tsp wholegrain mustard
- 1 tbsp white wine vinegar
- Pinch of salt
- Salad leaves
- Handful of walnuts, toasted

Fry the bacon in a pan, let the fat render out and go crispy. Remove and chop. Add the butter to the same pan, then add in the pear. Cook until it starts turning golden and caramelised.
Slice the goats cheese and drizzle with honey. If you have a blowtorch then give it a bit of colour but if not, just pop it under the grill until it’s caramelised.
Make the dressing by combining the oil, mustard, vinegar and a drizzle of honey. Add a pinch of salt and mix it well.
Assemble your salad leaves, walnuts, dressing, pears, cheese and bacon. Yum!
