Inspired by the best toastie in London - Deeney's Hamish Macbeth - I’m serving up a haggis toastie for Burns Night!
Ingredients
- Half a leek, finely sliced
- 2 spring onions, finely sliced
- 2 rashers smoked streaky bacon, chopped
- Handful of haggis, roughly chopped
- 2 slices of bread
- 1 tsp wholegrain mustard
- 50g cheddar cheese, sliced
- Lettuce

Fry off the leeks and spring onions in a pan with a little bit of butter and a pinch of salt. Set them aside.
In the same pan, fry the bacon until you get some colour. Add in the haggis and cook until the outside is lovely and crisp.
Then it’s toastie time! Butter the outside of the bread, then start with the mustard, add on the bacon and haggis, then the leeks and onions. Top with cheese and your lettuce or rocket (and a blob of mayo if you like!). The last slice of buttered bread and then onto the toastie machine (or a hot pan if you don’t have one).
Weigh down the top of the machine if possible with a pan to get that toastie nice and flat. Toast until beautifully golden and gooey!
