Grilled Peaches And Burrata

This recipe is easy to make and highlights the sweetness of summer peaches paired with creamy burrata cheese.

Ingredients

  • 2 peaches, halved and destoned
  • 1 burrata
  • A few handfuls of rocket
  • A handful of basil
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil

Half the ripe peaches and remove the stone. Rub with oil salt and pepper and pop onto a hot grill cooking on both sides until you see score marks.

Place them on a bed of washed rocket and top with a beautiful burrata (my favourite cheese). In a blender add your basil, balsamic, and oil, and season with a touch of salt and pepper. Blitz into a dressing and pour over your burrata salad. This is enough to serve two people as main or 4 people as a side.
