Giant Skillet Cookie

Ingredients

  • 120g butter
  • 100g granulated sugar
  • 150g brown sugar
  • 1 tsp vanilla paste
  • 1 large free-range egg
  • 210g plain flour
  • 3/4 tsp baking powder
  • 1/2 tsp salt
  • 200g chocolate chips

Preheat the oven to 180°C/350°F/gas 4.

Put the butter, sugars, vanilla and egg into a bowl and whip it up until it’s nice and fluffy. Sieve in the flour, baking powder and salt, and then add in the chocolate chips. Mix well.

Grease your skillet – or an oven-proof frying pan or tart tin will work just as well – and press in your mixture to make a giant cookie! Bake for 20-25 minutes until it’s gorgeously puffed up. Use a skewer to make sure the middle isn’t raw but you still want it gooey!

Finish it off with some scoops of ice-cream and it’s up to you if you want to share!
