Freezer-Friendly Ratatouille

Ingredients

  • 1 large onion, finely diced
  • 4 cloves of garlic, thinly sliced
  • 1 aubergine, chunky diced
  • 2 courgette, chunky diced
  • 2 peppers (red, yellow, or orange), deseeded and chunky diced
  • 2 large vine tomatoes, chunky diced
  • 680g passata
  • 2 tablespoons tomato paste
  • 400ml water
  • 1 tsp fennel seeds
  • 1 tsp oregano
  • Salt and pepper to taste

Preheat your oven to 190ºC/375ºF/gas 5.

In a large oven-proof pan, heat 1 tbsp of olive oil over medium heat. Add the diced onion and garlic, and sauté until they become translucent and fragrant.

Add the diced aubergine, courgette, and peppers to the pan. Cook for about 5 minutes until they start to soften.

Stir in the diced tomatoes, passata, tomato paste, and 400ml water. Mix well to combine all the ingredients.

Add the fennel, oregano, salt, and pepper to the pan. Adjust the seasoning according to your taste preferences.

Cover the dish tightly with foil or a lid. Place it in the preheated oven and bake for about 45 minutes, or until the vegetables are tender and the sauce has thickened.

Serve the ratatouille as a side dish with grilled meats, roasted chicken, or crusty bread. It can also be enjoyed as a vegetarian main course with some rice or pasta.

Once cooked, remove the dish from the oven and let it cool completely before freezing.

Divide the ratatouille into individual portions or desired serving sizes. Place each portion in a freezer-safe container or resealable freezer bags. Label the containers with the date and contents, then transfer them to the freezer.

Reheat the ratatouille in a saucepan over medium heat until warmed through. You can also microwave it on a low setting, stirring occasionally.

Consume within 3-4 months for best flavour and texture. Thawed ratatouille should not be refrozen; it is best to consume it within 2-3 days after thawing.
