Fairy Cakes

The classic fairy cake. A light vanilla sponge that's simple to make and delicious to eat.

Ingredients

  • 110g softened unsalted butter
  • 110g caster sugar
  • 1 tsp vanilla bean paste
  • 110g self-raising flour
  • 2 free-range eggs
  • 1-2 tbsp milk

Preheat the oven to 180°C/350°F/gas 4.

Cream together your butter, sugar and vanilla until light and fluffy.

Crack the eggs in one at a time, beating in between. Don’t worry if your mixture looks a little curdled, the flour will bring it back together.

Sift in the flour and fold using a spatula or large metal spoon, to avoid knocking out too much air.

Loosen the mixture to a dropping consistency with a little milk.

Line a cupcake tray with 12 cases and divide the mixture between. Bake for 8-10minutes until puffed up and golden.

Leave to cool before decorating and enjoy!
