Eton Mess

Eton Mess is a classic British dessert that combines fresh strawberries, whipped cream, and meringue. Easily make each of the components ahead of time and then assemble for a speedy picnic treat!

Ingredients

  • 400g strawberries, hulled and sliced
  • 1 tsp granulated sugar
  • 1 tbsp balsamic vinegar
  • 250ml double or whipping cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • 4 store-bought meringue nests, crushed into small pieces
  • Fresh mint leaves, for garnish (optional)

  • 400g strawberries, hulled and sliced

  • 1 tbsp balsamic vinegar
  • 250ml double or whipping cream
  • 2 tbsp icing sugar
  • 1 tsp vanilla extract
  • 4 store-bought meringue nests, crushed into small pieces

Combine 150g strawberries with 1 tsp granulated sugar and 1 tbsp balsamic vinegar. Blitz together using the hand blender attachment on your Bosch Ergomixx and set aside. Dice up the rest of your strawberries.

In a separate bowl, whip the double cream using the whisk attachment on your Bosch Ergomixx until soft peaks form. Add the icing sugar and vanilla extract, then continue whipping until stiff peaks form.

Time to layer. I go in with some whipped cream and then swirl in some strawberry sauce. Top with crushed meringue and then diced strawberries. Repeat until you’ve used up all your ingredients.
